Dry Malt Extract by the kettleUnhopped malt extract has changed a lot since I started brewing. When I started, there were three types: light, amber and dark. Now, you can get extracts made from specialty base malts like Pilsner, Munich and maris otter.

I talk about some of the advantages and disadvantages of using unhopped malt extract.
